This is NOT just a recipe for paleo, wahls, gluten free, plant based, whole 30 or atkins dieters. This is one that we should ALL learn. My husband, who is quite picky, gave me the go ahead to replace our usual wheat spaghetti noodles with these. And I assure you that that means they are better than any gluten free alternative… and just as delicious as real spaghetti. This also can be done as a side to any dish. If you don’t have a spiralizer you can buy one OR… Sprouts, Whole Foods and Trader Joes sell these already conveniently spiraled. I HIGHLY recommend buying the attachment for your kitchen aid so you can make your own.
Herbed Zoodles

- 5 Spiraled Zucchinis (4 if they are large)
- 2 Cloves Crushed Garlic
- 2 Tablespoons Olive Oil
- 1 Teaspoon Salt (or less - start small and go to taste)
- 1/4 Teaspoon Pepper
- 1 Tablespoon Dried Basil
- Zest of One Lemon
- Juice of Half a Lemon
Instructions
- Heat Olive Oil in a Pan on medium heat
- Add garlic, saute for about 30 seconds
- Add zucchini and toss to coat in the oil
- Cook for about 2 minutes and carefully drain any liquid
- Add salt, pepper, basil, lemon zest and lemon juice and toss to coat, return to the heat
- Cook for an additional minute or until the zucchini is tender but not mushy (IMPORTANT – what makes this dish is getting the tenderness right. The veggies tend to wilt and continue cooking so pulling it from the heat sooner rather than later is key)
- Serve with your favorite sauce
